Green Grilling 101: Choose your food

Posted by Pinky Bean on May 20, 2008 10:32 AM Filed Under: Food

You already know now how to light your barbecue using more eco-friendly methods than traditional lighter fluid, and that if you have a major craving for charcoal-grilled food, you should use lump brands of charcoal as opposed to briquettes. But what about the food itself; is there any way to make your actual meal a little more earth-friendly? Absolutely and you probably already have an idea of what's coming next: go organic. That really didn't come out of left field, now did it?

Organic, hormone-free meat from grass-fed animals (such as La Cense beef) or cows raised on certified organic feed are better alternatives than that giant T-bone steak you picked up from the supermarket. For something a little different than the traditional grilled beef, you can take a look at the approved fish list and toss it on the grill for a light, healthy meal.

Finally, be creative. Meat obviously isn't the only food you can put on the barbecue. Grilling wonderfully enhances the taste of vegetables, which means you don't have to add a lot of oil or butter for flavor. Watch the clip below for an idea of some of the vegetables you can cook on your grill and how to go about it. For a super easy starch, try one of Mr. Pinky Bean's barbecue favorites. Scrub some potatoes and slice, cube or cut them into bite-size chunks leaving the skin on. Dice an onion into regular-sized chunks as well. Lay both vegetables on top of a large piece of aluminum foil. Dot some butter or margarine in between the vegetables and sprinkle on some pepper or Montreal Steak Spice. Fold the foil into a packet, ensuring it is sealed at the top so the vegetables don't fall out. Grill on the barbecue next to your meat until the potatoes are tender. Easy? Yes. Delicious? You betcha!

For an easy lunch the next day, grill some extra portions of meat to put on top of a salad.
